Something to Make
The Best Basil Pesto
Ingredients
100ml olive oil
80g parmesan cheese
30g pecorino cheese
30g pine nuts
2 fresh garlic cloves
50g basil leaves, treated like precious babies
Method
- Place all ingredients (except oil) into a deep mixing bowl
- Using a bamix or handheld blender, start blending at low speed, stopping often so that you don’t overheat the ingredients
- Add a little il slowly until the desired consistency is reached
- Add salt to taste and keep in an airtight container, covered with a thin layer of oil
Pesto is best eaten fresh but will last for a few days in the fridge and you can freeze it too.
You can make pesto with other herbs and nuts too but do not under any circumstance make it with fennel fronds. I tested it on behalf of all of you and in my household, there was indignation that I would try such a thing, chaos and crying. The End.
My advice would be to stick to this one courtesy of the one and only Maria Angela Morelli (amazing cook for many years at my Italian retreats with Yoga in Italy).
Something to Do
Well, to be honest, it’s kind of hard to go past the two retreats that I am currently working on.
For a local experience, there is my Autumn Recharge Retreat 9-13th May at the gorgeous Yungarra Estate in the south-west of Western Australia. Four days of being in nature, eating delicious food (all prepped by me), a spot of walking, soaking up some quiet relaxation time and hanging with some lovely peeps. Two spots available and registrations closing this Friday 26th April.
